and health authorities such as the National Academy
of Sciences and the WHO have recommended that people
should eat more fruit and vegetables and consume a rich
variety of whole grains, cereals and legumes.
Much of what we know today, incidentally, comes from
studies on religious groups with special dietary preferences.
The Adventist Health Study is one of the most often-quoted
sources of scientific informationin this regard.
Foods of animal origin are no longer viewed as dominant
items in a healthy diet. Scientific studies have repeatedly
shown that a balanced vegetarian diet containing high
dietary fiber protects us from diabetes, heart disease,
hypertension, many forms of cancer and chronic diseases.
